1/4 C BUTTER
3/4 C BROWN SUGAR
1 EGG
1/3 C ORANGE JUICE CONCENTRATE
1 TABLESPOON GRATED ORANGE RIND
2 C FLOUR
1 TSP BAKING SODA
1/2 TSP SALT
1 CUP CRUSHED PINEAPPLE WITH JUICE
1/2 C CHOPPED PECANS
CREAM BUTTER, SUGAR AND EGG. ADD ORANGE JUICE AND RIND AND MIX WELL.
SIFT FLOUR, BAKING SODA AND SALT. ADD TO CREAMED MIXTURE AND THEN STIR
IN PINEAPPLE AND PECANS.
POUR INTO A GREASED 9 X 5 LOAF PAN.
LET STAND WHILE OVEN HEATS TO 350
BAKE FOR 45 MINUTES
